I've come to appreciate a quality spice cake, and have also made quite a few iterations of them over the years. That being said, I'm always looking for ways to experiment with this classic recipe.
This recipe is one that you can make in about an hour with ingredients that you more than likely have on hand in the fall: canned pumpkin, evaporated milk, eggs, sugar, salt, butter, and a cake mix.
1 cup softened butter 3-4 cups powdered sugar 1 teaspoon pumpkin pie spice ... for this recipe because royal icing hardens in a few hours, which makes it easier to transport the cake pops.
