Butter Swim Biscuits (Butter Dip) are homemade buttermilk biscuits, baked golden in butter, are light, flaky, and moist with crispy edges. They are AMAZING and will go with almost everything!
Lift off the top piece of cling film and cut into 5cm/2in biscuits. Carefully lift them onto a lightly buttered baking sheet, then knead together and re-roll the trimmings to make more biscuits.
Make well in center, and add buttermilk. Mix by hand until just combined; do not over-mix. Turn dough out onto a well-floured surface, and cut into pieces with floured knife or bench scraper.
Inspired by the Northern Irish speciality Fifteens, they're delicious, easy to make, and the best part is there's no baking required. Crush the biscuits, and chop the cherries into small pieces.
